Turn on Collect star ratings in Edit space to collect a star rating with text testimonials. Video testimonials do not get a star rating.

No. After a testimonial is submitted with a star rating, you cannot remove the rating. Turn star ratings off, then add the testimonial again if you need a version without stars.

No. Collecting star ratings is on or off. Optional ratings are not available.

Can I add stars to testimonials I already have?

You cannot add or change a rating on an existing testimonial. To add stars to older text testimonials, turn star ratings off, then add those testimonials again with the rating you want.
